One-Pot Spinach, Chicken Sausage & Feta Pasta

Two tablespoons of extra virgin olive oil Three links of cooked, sliced poultry sausage (9 ounces) 1 cup onion, minced (see Tip) 1 minced garlic shallot 1 (8-ounce) can of tomato sauce without added sodium Baby spinach, 4 cups, lightly packed (half of a 5-ounce package) 6 cups whole-wheat rotini pasta, boiled 1/2 cup pitted, sliced Kalamata olives 1/2 cup feta cheese, finely shredded 1/2 cup freshly cut basil (Desired)  


Step - 1

Sausage, onion, and garlic should be added; cook, stirring frequently, for 4 to 6 minutes, or until the onion begins to color.  

Add tomato sauce, spinach, pasta, and olives; cook, stirring frequently, for 3 to 5 minutes, or until the mixture is simmering and the spinach has wilted.  

Step - 2

If required, supplement 1 to 2 tablespoons of water to prevent the pasta from adhering.  

Step - 3

Using feta and basil, incorporate them into the mixture.
